When our original Texas Rye hit four years old, we were pleasantly surprised by the density and clarity this benchmark revealed, with darker chocolates, more acidic dried fruits and a refreshing solvency. We've become so familiar with the dance between our whisky and the intense Texas environment that new plateaus of elegance and balance in our spirits are much appreciated and hard-won. What makes texas rye Different

Our Texas Rye Bottled in Bond is a finely honed expression of Texas rye. Distilled from a 100% rye mash bill using a carefully considered combination of 91% raw Texas Elbon rye and specialty German Cara rye, chocolate and roasted rye, the ingredients are all milled, mashed, fermented, distilled and matured on-site in Waco. Upon its release in 2023, this unique rye whisky was the only whisky on the market with a 100% rye mash bill made in 100% copper pot stills.

This approach—alongside our extended fermentation, dedication to double-batch copper pot still distillation, meticulous blending process and diligent attention to detail at every step—has led to this celebrated, award-winning rye whisky.

ON THE NOSE, Texas Rye Bottled in Bond balances spruce-tip tea, candied fennel and gingersnaps before leading to cooling notes of mint chip ice cream and raspberry glaze.

ON THE PALATE, dusty notes of graham cracker crust, cardamom and cedar chest fold before well-articulated notes of carrot frond and dark chocolate espresso bean. Nutella and apricot preserve on rye toast linger for the long and dry finale.

TEXAS RYE MANHATTAN

Notes of dark chocolate and espresso bean from our Texas Rye bring richness and depth to this take on the classic Manhattan cocktail.

INGREDIENTS

  • 1 oz Balcones Texas Rye Bottled in Bond
  • ½ oz Sweet Vermouth
  • 2 dashes Bitters
  • Orange Twist

METHOD

Combine all ingredients in a chilled mixing glass. Add ice and stir. Strain into a coupe and garnish with an expressed orange twist.

The distillation process of our Texas Rye Bottled in Bond follows the stringent parameters to achieve the premium designation, including the casks being pulled from the same six-month season and a minimum maturation of four years in a US bonded warehouse.
HOW DOES TEXAS RYE BOTTLED IN BOND DIFFER FROM THE ORIGINAL TEXAS RYE 100?
Our Texas Rye Bottled in Bond is aged for a minimum of four years, which is twice as long as the minimum age required for our original Texas Rye 100. We have also increased the Elbon rye from our original Texas Rye 100, and, along with the considered combination of raw rye and German specialty ryes, the new Texas Rye Bottled in Bond flavor profile is exceptionally balanced, with strong chocolate and tobacco notes.

Over the years, we have thoroughly enjoyed what the Texas-grown Elbon rye distillate showcases on its own. When separated from the German specialty ryes, the grassy, fennel-carrot quality really shines. We wanted to further balance the overall experience by softening the influence of the German specialty ryes to increase more of the local Texas rye. Now, the dark chocolate and espresso notes show more like melted mint chocolate chip ice cream, and the chocolate-covered cherry turns into a raspberry glaze sauce.
