What makes MIRADOR Different

OUR PROCESS
Historically, Mirador highlights Golden Promise malted barley matured in refill casks. We do this to showcase the subtle grain nuance and delicate fruit we often find during our long and open fermentations and double-batch copper pot distillations. Mirador Eclipse takes a step further in exploring our unique dual-yeast fermentations.

INGREDIENTS
For this release, we substituted our standard ale yeast for two strains of yeast: a red wine and rosé yeast alongside our house malt whisky yeast. This process yielded notes of soft, blush red berry and fruits-of-the-forest that our single malts typically don’t readily showcase.

MATURATION
Matured in a variety of first-, second- and third-fill used Kentucky bourbon casks for four to five years before reaching the blending table, this American Single Malt balances fruit, grain and density of palate.

ON THE NOSE, sun-kissed notes of poised pressed flowers and clover hay are engulfed by mango meringue and pineapple gumdrops, while dense notes of almond biscotti and honeydew rind round out the profile.
ON THE PALATE, blush lemon custard and white-chocolate raspberry tart mingle with more reserved notes of guava pound cake and prairie sage, leading to a long and confident finish of dried thyme and honeyed jasmine tea.
