Baby Blue is crafted from 100% Texas-grown and roasted matured in used oak barrels to highlight the nuance of the maize. This emphasis on a very grain-forward pot-distilled single grain, specifically blue corn, is what sets Baby Blue apart.
This approach—alongside our extended fermentation, dedication to double-batch copper pot still distillation, meticulous blending process and diligent attention to detail at every step—has led to this celebrated, award-winning whisky.

ON THE PALATE, our flagship roasted blue corn whisky is easygoing and warm, with sun tea and green peppercorn woven into a sweet tapestry of kettle corn, vanilla sponge cake and brown butter.

Texas Mule
Our rendition of a fan favorite. Light, fresh and endlessly sippable, it's no wonder the Texas Mule is one of our most popular cocktails.
INGREDIENTS
- 1 ¼ oz Balcones Baby Blue Corn Whisky
- Barspoon Liqueur (or ¼ oz Nonalcoholic Shrub)
- Ginger Beer
- ¾ oz Lime Juice
METHOD
Add all ingredients to a highball glass, gently stir to combine and top with ginger beer. Garnish with ginger candy, citrus slice or star anise.
