BALCONES SPECIAL
INGREDIENTS
1 1/2 oz. Balcones Texas Pot Stilled Bourbon
3/4 oz. Fresh lime juice
3/4 oz. Ginger beer (we use Reeds Extra)
1/2 oz. Falernum (we use BG Reynolds)
2 Dashes of Angostura bitters
Garnish: Lime wheel saturated with sugar and agno bitters (torched)
RECIPE
Shake with ice and pour contents into a rocks glass (a dirty pour). Garnish and serve.

What is pot still bourbon?
Though others may use different processes, we use a traditional copper pot still to make our bourbon. The more common method of bourbon distillation is on a “column still,” which creates a lighter spirit, whereas a pot still ensures a rich and viscous spirit that stands up to aging in new charred oak in the Texas climate without losing its essence.
What's the difference between bourbon and whisky?
Whisky is a distilled spirit made from fermented grain such as rye, wheat, corn or barley. Bourbon is a type of whisky, made only in America, that has a specific set of criteria:
- Made from a minimum of 51% corn
- Distilled no higher than 160 proof
- Aged in new, charred oak barrels no more than 125 proof
- Must be a minimum of 80 proof at bottling
Is Texas Pot Still Bourbon smooth enough for sipping?
Yes, it stands on its own a sippable bourbon, but can also be a great addition to a whisky cocktail.
