When our Rye hit four years old, we were pleasantly surprised by the density and clarity this benchmark revealed, with darker chocolates, more acidic dried fruits, and a refreshing solvency. We have become so familiar with the dance we have learned to step in our intense Texas climate, that new plateaus of elegance and balance in our spirits are much appreciated and hard won.

Tasting Notes
A Texas Twist
ON THE NOSE, Texas Rye Bottled in Bond balances warm sun tea, candied fennel, and spruce tips before cooling notes of melted mint chip ice cream and raspberry glaze.
ON THE PALATE, it begins with graham cracker crust, dark chocolate espresso bean, and cardamom before well-articulated notes of carrot frond, cedar chest, and apricot preserves. Nutella and blackberry jam on rye toast linger for the finale.

INGREDIENTS
1 oz Balcones Rye Bottled in Bond
1/2 oz Vermouth
2 dashes Bitters
RECIPE
Combine all ingredients in a chilled mixing glass. Add ice and stir. Strain into a coupe and garnish with an expressed orange twist.

How is Texas Rye Bottled in Bond different from the original Texas Rye 100?
We have increased the Elbon Rye from our original Texas Rye 100, along with the considered combination of raw rye and German specialty ryes, the new Rye Bottled in Bond flavor profile is exceptionally balanced with strong chocolate and tobacco notes.
Over the years we have thoroughly enjoyed what the Texas grown Elbon Rye distillate showcases on its own. When separated from the German specialty ryes the grassy, fennel-frond quality really shines. We wanted to further balance the overall experience by softening the influence of the German specialty ryes in order to increase more of the local Texas rye. Now, the dark chocolate/espresso notes read more like melted mint chocolate chip ice cream, and the chocolate covered cherry turns into a raspberry glaze sauce.

The distillation process of our Rye Bottled in Bond follows the stringent parameters to achieve the premium designation, including the casks being pulled from the same 6-month season and a minimum maturation of four years in a U.S. bonded warehouse.
